Chickpeas salad is super easy to make and one of my favorite salad. I make this salad quite often but always try different variations depending on my cravings at the moment. For this salad, I have used of course chickpeas and chopped tomatoes, carrot, onion, and freshly cilantro leaves.
Making this salad is so effortless. Just need to assemble all your favorite vegetables, chop them, and mix them together with your favorite salad dressing. This salad is has a good balance of protein and fiber (and low on carbohydrate).
I love this fresh salad with beetroot rice, which filled with the variety of fresh colorful produce and the perfect complement of chickpeas. Not only is the combination of colors and textures beautiful, but it is also loaded with flavor for a totally irresistible meal ready in just minutes.
I have served this salad with beetroot rice, which is a very healthy way to add some carb in a salad bowl. Making beetroot rice is also a very easy process. Chopped beetroot and boil it in enough water. Drain the water and cook rice in this beetroot red water. I will upload the beetroot rice recipe very soon on the blog.

- Chickpeas: ½ cup (cooked)
- Tomatoes: 1 (chopped)
- Carrot: ½ cup (chopped)
- Red onion: 1 small (chopped)

- Now add salt to taste, lime juice, garlic, and olive oil and give it a good mix.
