Chickpeas salad is super easy to make and one of my favorite salad lately. I make this salad quite often but always try different variations depending on my cravings at the moment. For this salad, I have used of course chickpeas and chopped lettuce leaves, cucumber, carrot, and moong sprouts.
Chickpeas are the perfect ways to create a salad that packs with protein without adding any meat. I love fresh leafy salad, which filled with the variety of fresh colorful produce and the perfect complement of chickpeas. Not only is the combination of colors and textures beautiful, it is loaded with flavor for a totally irresistible meal ready in just minutes.
Making this salad is so effortless. Just need to assemble all your favorite vegetables, chop them, and mix them together with your favorite salad dressing. This salad is has a good balance of protein and fiber (and low on carbohydrate).
For this salad, I have used a homemade fresh salad dressing, which is made of fresh minced garlic, lime juice, oregano leaves, and olive oil, and it goes very well this salad. Chickpeas salad is such a delicious and nutritious way to enjoy fresh summer veggies and is perfect to make ahead and enjoy for lunch or dinner.

For Salad Dressing:
- Extra virgin olive oil: 1 tbsp
- Lime juice: 2 tbsp
- Salt: 1 Tsp or as required
- Garlic: 1 Tsp (minced)
- Red chili flex: 1 Tsp (optional)
- Oregano leaves: 1 Tsp
- Chickpeas: 1cup (cooked)
- Lettuce: 2 cups (chopped in square shaped)
- Moong Sprout: ½ cup
- Carrot: ½ cup (chopped)
- Cucumber: ½ cup (chopped)
Let’s begin: How to Make chickpeas salad with step by step photos –
- For the salad dressing, combine lime juice, garlic, salt, oil, oregano leaves, and red chili flex together in a small bowl.
- Whisk them and keep it aside. Now time to prepare the salad.
- In a large bowl assemble all raw ingredients (lettuce, cucumber, carrot, and moong sprouts), toss them.
- Serve them in a large salad bowl with chickpeas.
- Drizzled the salad dressing on the top and give it a good mix.
