Caribbean Style Pineapple Chicken with Quinoa

Hello all, what do you think of having pineapple and chicken together? I know, you guys would think what’s this combination – sweet, sour, and spicy ㋡! Believe me, you are gonna love this recipe of Caribbean style pineapple chicken.

A short story about this recipe. I had a pineapple sitting in my fridge and I wanted to use it for cooking something, but I wasn’t sure what to make. One day, while making chicken I added some pineapple cubes. It tasted good, so I thought that I can base this whole recipe using pineapple. Next time, I used the whole pineapple to make this recipe and it turned out so tasty with tangy flavor.

I always try to make my recipe healthy and tasty. In this recipe, I used very less oil. But if you want to cook this recipe without oil, you can just bake the chicken and add it to the pineapple sauce, which I have explained below. I served this recipe with quinoa, that I find a healthier option over rice. However, this recipe can be served with rice, paratha, or chapati.

Ingredients:

For Pineapple sauce:

  • Pineapple:1 (1/2 for juice and 1/2 cut into cubes)
  • Chicken broth: 1/2 cup
  • Garlic powder or paste: 1tbsp
  • Tomato puree: 4 tbsp
  • Soy sauce: 4 tbsp
  • Sirarcha or hot sauce: 4 tbsp
  • Brown sugar: 2 tbsp
  • Salt: as needed or 1tsp

For Chicken:

  • Chicken breast: 1 pound (cut into small cubes)
  • Red chili powder: 1tsp
  • Salt: 1 tsp or as needed
  • Garlic powder or paste: 1tbsp
  • Oil: 1 tbsp

Let’s begin:-

  • Cut the pineapple into cubes. Blend 1/2 of the pineapple to extract juice. [Note: You can also use canned pineapple juice to make this recipe.]

  • In a saucepan, whisk the pineapple juice, soy sauce, sriracha or hot sauce, tomato sauce, brown sugar, garlic, chicken broth, and salt together.
  • Boil this mixture until it has reduces to half (about 15 minutes). It should be like a thick sauce by now.
  • Turn off the flame and keep it aside.

  • Rinse and cut the chicken breast (or thigh) into small cubes.
  • Add red chili powder, garlic powder, salt and a little bit of oil.
  • Mix everything together.
  • Now in a heated pan add oil and saute the chicken until light brown.

  • Combine the chicken with the pineapple sauce.
  • Add pineapple cubes and mix them well.
  • Now, turn on the flame and cook chicken and pineapple together in the pineapple sauce for about 15 minutes on low flame.

  • Turn off the flame, and it is ready to be served.
  • Garnish with some chopped mint leaves and sesame seed.

Serve Pineapple chicken with quinoa or rice.
