Mutton Rogan Josh is one of the signature recipes of Kashmiri cuisine. This is an aromatic curried dish, which is traditionally made with lamb or goat meat.

In this post, I am sharing two ways to make Mutton Rogan Josh Recipes, both Kashmiri Pandit and Muslim style. I will not call this recipe authentic because I have not used the same method and have skipped some ingredients, like Ratan jot, which gives this recipe nice red color. However, these recipes turned out so delicious. We tried to experiment with a vegetarian version of Rogan josh paneer, mushroom, cauliflowers, chickpeas, and lotus root with the same method.

Let’s talk about what Rogan Josh is: It is a deep red spicy lamb/goat curry dish of Persian origin. It was brought to Kashmir by the Mughals. This dish has a thin red-colored gravy and a thick layer of ghee on top. The main spices for the curry are hing, fennel seed powder, dry ginger powder, Kashmiri red chili, coriander powder, and garam masala.

Now, Let’s talk about what is different between Kashmiri Pandit and Muslim style recipe- The only difference between these two recipes is Kashmiri Pandit don’t use onion and garlic. However, Muslim style recipe does use those.

Mutton Rogan Josh recipe Without Onion And Ginger (Kashmiri Pandit Style)

Making Rogan josh at home is so easy, and the taste is delicious. I love making Rogan josh without onion and garlic because it doesn’t require any chopping and cutting. To make this recipe, I have used a pressure cooker. It took me only 40 minutes to make this.

I have divided this recipe into 2 steps. First, I cooked the meat in the pressure cooker. Meanwhile, I used a pan to sauteed the yogurt (Dahi) mixed spices and then added the cooked meat. Please, watch the video linked above for reference and find the written recipe below.

Note: You can also make this recipe in one pot; after cooking the meat in the pressure cooker, add the spice mix and water. And continuously stir it until the curry starts boiling. Once it starts boiling, then cover it and cook it on low flame.

Ingredients:-

  • Goat meat- 500 gm
  • Ghee- 3 tbsp
  • Black cardamom- 2
  • Cloves- 5 to 6
  • Cumin seeds- 1 tbs
  • Asafoetida (hing)- ½ tsp
  • Saffron- a pinch
  • Milk- 2 tbsp
  • Yogurt (Dahi)- 4 tbsp
  • Kashmiri red chili powder- 1 ½ tbs or as per taste
  • Fennel (sauf) seed powder- 2 tsp
  • Dry ginger powder- 1 tsp
  • Coriander powder- 2 tsp
  • Garam masala- 1 tsp
  • Salt- as required or 1 tsp

Let’s Begin:- How to make Mutton Rogan Josh Without Onion and Garlic

  • In a heated pressure cooker, add 2 tbsp ghee and then add cardamom and cloves.
  • Fry them for 10 seconds, add cumin seed, let the seed crack, and then add hing. Stir them once.
  • Now, add the meat and fry the meat for about 5 minutes or until it changes its color.
  • Add salt to taste and one cup of water.
  • Close the lid of a pressure cooker, and let the meat cook for about 15 minutes on medium flame, or until 5 whistles. And then naturally release the pressure.
  • Meanwhile, prepare all the spices. In a small bowl, add warm milk and a pinch of saffron. Mix well and keep it aside.
  • In a separate bowl, add yogurt, red chili powder, fennel seed powder, dry ginger powder, coriander powder, 1/4 tsp hing, and the mixed saffron milk. Mix everything well.
  • Now, In a heated pan, add a tbsp ghee and the spice mix. Stir it continuously for about 2 to 3 minutes or until ghee separates.
  • Now, add the cooked meat along with half a cup of water, garam masala, and salt. Mix well
  • Cover the lid and let the meat cook for another 10 more minutes on low flame. And then turn off the flame.

Mutton Rogan Josh Recipe With Onion And Ginger (Muslim Style)

Ingredients

  • Goat meat- 500 gm
  • Mustard oil- 2 tbsp
  • Black cardamom- 2
  • Cloves- 5 to 6
  • Whole black peppers- 5 to 6
  • Cumin seeds- 1 tbs
  • Asafoetida (hing)- 1/4 tsp
  • Onion- 1 large (1 cup chopped)
  • Garlic- 1 tbsp chopped or paste
  • Yogurt (Dahi)- 2 tbsp
  • Kashmiri red chili powder- 2 tbs or as per taste
  • Fennel (sauf) seed powder- 2 tsp
  • Dry ginger powder- 1 tsp
  • Coriander powder- 1 tsp
  • Garam masala- 1 tsp
  • Salt- as required or 1 tsp

Let’s Begin:- How to make Mutton Rogan Josh With Onion and Garlic

  • In a heated pan, add oil and the whole spices (black cardamom, cloves, black pepper) fry them for 10 seconds.
  • Add cumin seed and let them crack and then add hing. Stir them once.
  • Now, add onion and garlic, and fry them till light brown.
  • It is time to add the meat and fry the meat for about 5 minutes or until the meat changes its color.
  • Add salt to taste and one cup of water. Mix well, and then cover the pan. Cook the meat on low flame for about 25 to 30 minutes. Or until the meat gets tender.
  • Once the meat is cooked well, add all the spices (red chili powder, fennel powder, dry ginger powder, garam masala, and coriander powder) and a cup of water. Mix them well.
  • Cover the pan and let it cook for another 10 minutes on low flame.
  • Now, add 2tbsp of beaten yogurt (Dahi) and continuously stir the meat for 2 minutes or until the curry starts boiling. Cover the pan for another 5 minutes on low flame and then turn off the flame.
  • Mutton Rogan Josh is ready to be served. Enjoy this dish with Paratha, naan, or rice.
